The Chickery’s Street Corn
“The street corn is inspired by a combination of an American classic and Mexican street food. We wanted to bring a twist to something so many guests love, and we’ve done that with our house-made chipotle lime crema and fresh parmesan cheese.
“In our crema, we’ve combined fresh jalapeños, chipotle peppers, and adobo to bring a bit of heat, then fresh lime juice to temper it off. There is a wonderful creamy balance throughout the sauce, all topped with fresh parmesan to add a touch of salt.”

The Hummus & Pita Co.’s Couscous Salad
“Couscous is one of our most popular ‘fill-its’ (sides). We began to take note of how our guests were mixing in other items when they ordered couscous, and we saw this as an opportunity to really create another addition to our menu. We were able to create a standalone side without going beyond our current ingredients that we have on hand.
“Couscous is so versatile, and we wanted to really highlight the craveability factors of our Mediterranean ingredients and flavors by adding in our Moroccan carrots, feta cheese, Kalamata olives, and corn. Once combined, we get a super bright and appealing salad/side. Our guests absolutely love and crave it. It has been one of our top performers since its addition to the menu.”

Dog Haus’ Loaded Tots
“Dog Haus was created from the idea of capturing that childhood nostalgia of eating a hot dog and hamburger. Our goal was to elevate the flavors for the adult palate. Tots elicit that same childhood memory for many people.
“You take a great base like a bed of hot crispy tots, consider all the toppings we have, and the options for creativity are endless. We started creating variations of loaded tots for our social media channels, and before long we had guests walking in to create their own versions.”
