Dillas Quesadillas has promoted restaurant industry veteran Michael Mabry to chief operating officer as the North Texas-based company strengthens its leadership team for its next phase of growth.

Effective Oct. 7, Mabry will oversee day-to-day operations, marketing and franchise sales across the 11-location brand. The newly created position will allow co-founders Kyle and Maggie Gordon to focus on growth strategy and capital as Dillas works toward its goal of 50 locations by 2028.

Mabry joined Dillas in August 2025 as head of franchise development, but his relationship with the Gordons spans more than a decade. He brings more than 30 years of restaurant industry experience, including serving as president and COO of MOOYAH Burgers, Fries & Shakes, chief development officer of Fuzzy’s Taco Shop and president of Famous Toastery.

“Michael knows Dillas, knows us and understands what it takes to scale a restaurant brand,” said Kyle Gordon, co-founder and CEO of Dillas Quesadillas. “We have six restaurants in the DFW franchise pipeline and additional growth underway in Louisiana. Having someone with Michael’s experience leading the day-to-day business gives us confidence that we can grow while continuing to support our teams, franchise partners and guests.”

The promotion comes as Dillas prepares to accelerate expansion following nearly two years focused on strengthening its operations. The company has simplified its menu, invested in technology and streamlined restaurant processes to prepare the business for growth. Dillas also recently opened its first nontraditional location inside Brookshire Grocery Arena in Bossier City, Louisiana.

“Dillas is at an exciting point in its growth,” said Mabry. “We’ve built a strong operational foundation, and my focus now is making sure our operations, marketing and franchise development stay aligned as we add restaurants. Growth only works if our teams and franchise partners have the systems and resources to support it.”

Founded in Plano in 2013 by Kyle and Maggie Gordon, Dillas has grown to 11 locations across Texas and Louisiana. The company expects to approach $20 million in systemwide sales in 2026 and is targeting 50 locations by 2028.
