Modern Market opened its very first Colorado Springs location at The Promenade Shops at Briargate.
The newest restaurant joins nine others along the Front Range, two in Denver International Airport, and four in Texas. The next Modern Market opening is scheduled for mid to late February in Richardson, Texas, followed by Broomfield, Colorado, in the spring.
“Opening a location in Colorado Springs has been a long time coming. It seems both we and our guests have wanted a Modern Market in the area since before we can remember,” says Modern Market cofounder Anthony Pigliacampo. “Once we found the right spot, it was a no-brainer. It feels pretty good to know we are expanding our Front Range footprint and contributing to the health and happiness of even more Coloradans.”
The restaurant’s seasonally changing menu includes farm-fresh salads, pizzas made with whole-grain dough and organic tomatoes, scratch-made soups, toasted sandwiches, classic home-style plates, and breakfast entrées made with cage-free eggs and all-natural, nitrate-free breakfast meats. Modern Market provides many gluten-free, vegan, and vegetarian options, catering for meetings and events, and it even breaks down the nutritional content of meals on each receipt.
Fast food can be good food. That idea led to the creation of Modern Market in Boulder, Colorado in 2009. It took two people with zero restaurant experience to figure out that you could serve healthy, scratch-made fare for reasonable prices in a beautiful environment. Breakfast, lunch, and dinner rule the day at Modern Market with a broad menu of farm-to-table food that tastes even better than it looks. The company aims to bring healthy, sustainable dining to the masses. With locations in Colorado and Texas, it is just getting started.
