Parkside Projects announced the opening of JUGO, a healthy, grab-n-go destination that opens its doors mid-January in Austin, Texas. The latest venture from chef and restaurateur Shawn Cirkiel, JUGO will offer a wide selection of fresh-pressed juices and smoothies, as well as freshly made and packaged snacks, salads and hot items from its central downtown location at 603 Brazos Street.

JUGO is the natural next step for Parkside Projects, which already includes successful restaurants Parkside, Olive & June, The Backspace and Bullfight. Chef Shawn Cirkiel developed the concept alongside culinary director Justin Rupp with the intention of building a health and wellness focused dining destination where guests can both detox with a fresh-pressed juice or pick up a restaurant-standard meal item on the go.

“The development of JUGO is an exciting next step in the growth of our culinary portfolio,” says Justin Rupp, culinary director of Parkside Projects. “With the new concept, we’ve been able to apply the Parkside Projects culture and attitude towards food and beverage in a fun, casual way to create a menu that is not only health-focused, but diverse and flavorful.”

JUGO’s menu includes juices with inventive and flavorful combinations like Apple, Fennel, Celery, Romaine, Grapefruit and Beet, Carrot, Ginger, Lemon, whereas the smoothie selection will boast blends like Peach, Kale, Peanut Butter, Apple Juice and Mango, Banana, Pineapple. The eatery will also offer homemade snacks and small bites like crunchy rice noodle Spring Rolls and homemade Raw Carrot Hummus, in addition to heartier entrees like Cilantro-lime Spaghetti Squash and Beef Bone Broth. In keeping with the ethos of all Parkside Projects establishments, all of JUGO’s menu items are made in-house daily using only the most seasonal, organic and sustainable ingredients whenever possible.
