Birdcall—the Colorado-born fast casual brand specializing in award-winning all-natural chicken sandwiches, salads, and more—today announced its continued expansion throughout Denver with a new agreement to develop five restaurants in South Denver. 

While leases have not yet been finalized, the planned development in South Denver will focus on high-growth communities south of the city’s E-470 corridor, including Castle Rock, Highlands Ranch, Parker, Lone Tree, and surrounding areas.

“This is our backyard, and we couldn’t be more excited to continue growing here,” said Birdcall CEO Mark Lohmann. “The momentum behind our brand has been incredible, and expanding further in Denver allows us to deepen our roots in the communities that have supported Birdcall from the very beginning.”

The five new restaurants will be owned and operated by Renee Pawloski, who moved to Denver approximately two years ago and is now putting down roots through her new role with Birdcall. She was previously an interior designer before stepping away from her career to raise her family. She is now re-entering the workforce as an owner-operator, leading the development and day-to-day operations of the upcoming restaurants.

“Birdcall’s values, culture, and focus on quality really resonated with me,” said Pawloski. “After years focused on my family, I was looking for an opportunity to build something meaningful in my community, and becoming an owner-operator with Birdcall felt like the perfect next chapter.”

The new Southwest Denver locations will bring the same signature Birdcall experience guests know and love, featuring a welcoming, high-energy atmosphere, vibrant interiors, bold art, and self-serve ordering kiosks for a seamless and enjoyable visit.

The made-to-order menu will be highlighted by eight award-winning chicken sandwiches, sliders, hand-cut tenders, gluten-free nuggets, and chef-inspired salads, complemented by a variety of sides such as fries, tater tots, loaded tots, and coleslaw, as well as an array of house-made sauces and dressings. Guests will also enjoy draft beer and house-made margaritas, with Happy Hour specials.

Beyond its culinary focus, Birdcall emphasizes community engagement through its 1% Back initiative, which pledges a portion of sales to local nonprofits and organizations. The restaurants integrate with the community by providing meal donations, donating supplies to neighboring schools, hosting local nonprofits for restaurant nights in which a portion of sales are donated back to the organization, and more.

The announcement comes less than three weeks after Birdcall signed a separate agreement for five other restaurants across Southwest Denver, including Lakewood, Littleton, Ken Caryl, and Dakota Ridge.

It also marks an exciting step in the company’s continued growth across the United States. With 16 restaurants currently open and operating across three states (Colorado, Arizona, Texas), and nearly 20 others in various stages of development, Birdcall plans to have as many as 200 locations nationwide by the end of 2028.

With AUV’s of nearly $2.5 million and a franchise fee of $50,000, Birdcall provides franchise partners an opportunity to get in on the ground floor of an emerging brand in the ever-growing chicken franchise industry. The total investment to open a 2,300 square-foot restaurant that typically seats about 125-150 people and employs approximately 25 people starts at $752,000.
