Bubbakoo’s Burritos, a Jersey Shore-based eatery that touts Mexican food fused with an American flavor, is expanding into Southern California after signing a development deal to open three more stores in South LA County and Orange County. The deal was signed shortly after Bubbakoo’s opened their first California location in Lancaster earlier this month.

 

The deal is one of many across the country that is bringing Bubbakoo’s to more than 50 locations open or in development. The nationwide expansion is targeting other markets within Pennsylvania, New York, Kentucky, Georgia, Tennessee, and Florida — but the Southern California expansion boasts an impressive eight locations coming soon.

 

The three-store deal was signed in addition to the five locations already set to open within LA County. The new locations will be located in the cities of La Habra, Downey, and Cerritos.

 

“LA has an impressive food scene, especially in terms of cultural cuisine,” says co-founder Paul Altero. “We are excited for this opportunity to have the community try our Jersey-Shore twist on everyone’s Mexican-American favorites.”

 

Bubbakoo’s offers the usual fast-casual burrito fare such as burritos, tacos, bowls, and quesadillas, but with 16 different protein options, including buffalo chicken, hibachi steak and shrimp, Sriracha shredded pork, and Southern-style barbecue chicken and pork. Vegetarian options include a bean-cheese-guacamole combo and batter-fried jalapeños. And, originals such as The Chiwawa, a cheese-smothered, panko-crusted fried rice ball, keep Bubbakoo’s faithful customers coming back.

 

The burgeoning burrito joint also offers sides such as Southwest egg rolls, chips, salsa, queso, guacamole, curly fries, and nachos, as well as desserts including batter-fried Oreo cookies and “love chips,” which are tortilla chips dusted in powdered sugar and drizzled with caramel or raspberry syrup.

 

“There’s something at Bubbakoo’s for everyone,” says Altero. “With vegan alternatives and a completely customizable menu, each customer can build their version of a perfect meal.”
