Modern Market Eatery has enhanced its guest experience by implementing the traditional full service restaurant practice of food running to its 27 brick and mortar fast-fine units. But rather than follow classic table service practices, the eatery is taking advantage of technology in several restaurants to facilitate faster and more organized dispatch.

Moving away from a buzzer system that requires guests to pick up their orders from an expo area allows customers to settle in at their tables reducing the number of people waiting and milling about in the dining room.  It also provides team members and cooks more time to focus on quality control before food leaves the kitchen.

After the meal, Modern Market Eatery team members are also bussing tables, a practice formerly left to the guests.

“What our guests were telling us was that the experience didn’t live up to the quality of the food,” says vice president of operations Robin Robison. “Our guests want more than healthy, delicious food, they want a stellar dining experience to match.”

In high volume restaurants, the eatery has implemented a radio-frequency identification (RFID) tracking system from Long Range Systems (LRS) so food runners can easily locate guests and quickly deliver food. In lower volume restaurants, table numbers are being utilized to match orders with guests.
