Potbelly Corporation, the iconic neighborhood sandwich shop, announced the upcoming opening of its first location in Springfield, Illinois, the state’s capital city. It is the brand’s second Central Illinois opening in the first quarter of 2024.
Opening, Tuesday, March 26, in the city’s downtown Memorial Health System campus, the new Potbelly Sandwich Shop will be located on the 1st floor of the Springfield Memorial Learning Center, across the street from the Springfield Memorial Hospital main building. There are entrances to the shop both streetside and from within the Center.
“This is fantastic for Springfield’s downtown. The buzz about the opening has been remarkable because there are so many Potbelly fans here already, says Rob Wilbern, the franchise owner of the Springfield location, as well as the owner of the new Champaign shop which opened just two months ago. “For the local workforce, as well as guests at the hospital and doctors’ offices, Potbelly brings a craveable mealtime option to the heart of the city. We’re going to be a favorite destination for the local community.”
Wilbern, who has lived in the Central Illinois region for years, is set to open an additional three Potbelly locations throughout Central Illinois, from the Champaign-Urbana market west to Springfield and Decatur, Illinois. A Certified Public Accountant with his own firm, Wilbern sees a bright future for Potbelly across the area.
“The wheels are already in motion on a Potbelly food truck that I’ll operate throughout Central Illinois,” adds Wilbern. “The more Potbelly we get into communities locally the better. This first-of-its-kind food truck will be the perfect way to immerse neighborhoods in the brand by expanding beyond our four walls.”
Wilbern plans to integrate into the community by parking the truck at events such as University of Illinois football games, music festivals, and street events, aiming to stay actively engaged with local happenings.
