The Bistro Gourmet Bakery, a premium foodservice dessert portfolio of The Hillshire Brands Company, has launched an expanded Bistro Collection line of gourmet cakes, each handcrafted and individually portioned for operational ease. 

The 10-product thaw-and-serve gourmet cake collection includes five new cakes and will be supported by a marketing campaign, including a mobile application.

“The Bistro Collection brand enables operators to provide patrons a diverse and gourmet dessert offering with an ease-of-service that will drive dessert sales,” says Vic De Martino, director of marketing, Bistro Gourmet Bakery desserts. “Each cake is prepared in small batches and hand-decorated, ensuring customers receive a quality product that both looks and, most importantly, tastes exceptional. All of our recipes are delicately crafted to assure a moist texture and deliver a melt-in-your-mouth flavor.”

The new flavors, developed based on consumer preferences, include:

  • Chocolate Raspberry Duet Cake: Chocolate cake layers divided by raspberry mouse, covered with white chocolate buttercream frosting and dark chocolate curls
  • Harvest Caramel Apple Cake: Cake with fresh pieces of apple, covered by cream cheese frosting, caramel, and toasted pecan pralines
  • Lemon Mousse Melody Cake: Cake infused with lemon mousse, covered by whipped cream and lemon candies
  • Roasted Pistachio Mascarpone Cake: Cake layered by pistachio mascarpone, covered with mascarpone frosting and roasted pistachios
  • Chocolate Peanut Butter Thunder Cake, made with Reese’s Peanut Butter Cups: Chocolate cake layers with crushed Reese’s Peanut Butter Cup covered with peanut butter frosting, chocolate drizzle, and additional Reese’s® Peanut Butter Cup

To accompany the cake launch, the Bistro Gourmet Bakery line of products is releasing new sales and operation tools, including a website, a mobile application available on iTunes and the Android App Store, and a video accessible on

The Bistro Collection Gourmet Cakes also include:

  • Chocolate Truffle Mousse Cake: Moist chocolate cake topped with chocolate mousse and rich fudge, covered by whipped cream and chocolate shavings
  • Flourless Chocolate Indulgence Cake: Flourless chocolate cake covered with rich chocolate ganache
  • Tiramisu Cake: Cake soaked in espresso, layered by mascarpone, and covered with whipped cream and cocoa powder
  • World’s Greatest Carrot Cake: Lightly-spiced cake with carrots and raisins, layered with cinnamon cream cheese frosting and covered with cream cheese frosting, buttermilk carrots, and walnuts; offered in both pre-sliced and unsliced formats
  • World’s Greatest Chocolate Cake: Four layers of moist chocolate cake, layered and covered with fudge frosting and accented with chocolate shavings; offered in both pre-sliced and unsliced formats

In addition to gourmet cakes, the Bistro Gourmet Bakery line of products includes dessert bars and brownies, individual desserts, cheesecakes, and pies.
