As Costa Vida Fresh Mexican Grill continues to gain popularity across regions of the U.S., the fresh Mexican grill is responding to increased demand in Washington with plans to expand their footprint in the Seattle metropolitan area. Costa Vida owners Robert Trent and Vaughn Wright will be opening their first location in Federal Way.
Opening their doors on November 17 in Federal Way, the local owners will be introducing Costa Vida’s made-from-scratch and gluten-friendly menu inspired by the cuisine and flavors of coastal Mexico. To celebrate the opening, Trent and Wright will invite the local community to the new restaurant at 1900 S. Commons, Suite A, for a celebration of fresh ingredients, vibrant flavors, and atmosphere that provides an escape to coastal Mexico. Kicking off at 10:30 a.m., the restaurant will be awarding the first 50 people in line with free Costa Vida once a week for an entire year, and the next 50 people with free Costa Vida once a month for an entire year. Everyone else in line on opening day will receive a free meal that day.
“We’re thrilled to invite new customers to escape to Costa Vida, introducing them to the fresh bold flavors of our menu. With unique food pairings and flavor profiles, Costa Vida is unlike the common Sonoran-style Mexican restaurants in the area,” Wright says. “We’ve recognized the substantial demand for quality, better-for-you Mexican cuisine in the Seattle area and are confident that Costa Vida will satisfy the local consumer palettes.”
Known for its menu of ingredients showcased through innovative cuisine inspired by coastal Mexico, Costa Vida prides itself on using raw and whole ingredients as well as an extensive variety of gluten-friendly options that are available upon request. The menu is inspired by the local cuisine of coastal Mexico and features made-to-order burritos, tacos, enchiladas, quesadillas, salads, and nachos. Protein choices include sweet pork, grilled chicken, shredded beef, raspberry chipotle chicken, grilled steak, Mahi Mahi fish, and shrimp. Entrées are served with cilantro lime rice and black, refried, or pinto beans. The homemade guacamole, sauces, and salsas that can be used to customize any order, include Salsa Fresca and Pico de Gallo.
